Slight RyeWhat bakery would be complete without offering a Rye bread? Rye, a beautiful gray-blue grain, is also a very ancient grain with a proud northern European heritage. For some, the dense, dark, almost brick-like loaf is a reminder of family and childhood. For many though, our palates enjoy something a little lighter. This is where the “slight” Rye comes in to play. While maintaining that characteristic Caraway and molasses flavor of Rye bread, we have incorporated two of our wheats to lighten the texture inside the loaf and added a splash of fresh brewed coffee for a smooth flavor. Sharp acidity and density are completely absent from this deep brown loaf. A toasted slice of this bread together with sauerkraut and a serving of smoked sausage from the pastured pigs here at Restoration Homestead makes for a fantastic, traditional family meal!
